Escarole and Beans like Nonna used to make!

Here are some pictures of my latest “almost vegan” escarole and beans. It came absolutely delicious.

I’d say to get it ‘soupy” enough for me (I like a lot of juice) I added about 80oz of liquid: 32oz veg broth, 32oz bone broth and about 16oz pure water to the 4 heads of escarole. The barley does a great job of thickening, and so I had to compensate. If there’s not enough liquid when you serve it then you can’t go bats__t crazy dipping your bread!
